This ultra premium winery makes wine in small lots, selected from organically grown vineyards, and hand harvested.  It’s currently the only bonded downtown winery in Paso Robles and is a treat to discover.
 
Located on the East side of town this boutique winery makes outstanding  Chardonnay, Alicante Bouchet, Cabernet Sauvignon, Petite Sirah, Syrah, Tempranillo and Zinfandel.  As a family operation there is a good chance the winemaker or his business partner wife will be on the premises to share with you the joys of their product. The tasting includes complimentary cheese and sausage.
 
The wine is not fined or filtered so it keeps its full potential in the bottle. The winery uses several techniques to enhance the wines natural characters and flavors, including cold soaking the fruit before fermentation. The third generation winemaker is a former Los Angeles chef, also uses an extended maceration process that naturally softens the tannins. With the exclusion of some white wines, all of the wine produced is fermented in either open top bins or barrels.  
 
Barrel samples are a frequent part of the tasting experience here as the winemaker likes to share and educate the visitor on how a wine might be developing.

We went to Hice Cellars in years past and had the best time ever! Probably the most friendliest winery we've ever been to, only problem is they are downtown they need to be on a vineyard to sell the ambiance. But, we started out there because it was close to our hotel. We went to four other wineries we ended up stopping back to buy some cheese. All the girls loved the jewelry and the winemaker was so much fun!! A must for any wine lover!!! By the way who lets you barrel taste unless you're a celeb..

It's not really out in 'wine country' but since I got to meet the winemaker and do a barrel tasting that helps make up for it...but then I really don't think a winery should be selling jewelry and other miscellaneous products...maybe the cheese so if I buy a bottle they can help me pair a cheese, but I just don't know...

The wines we tasted were ok, not great. As with many wineries, a one-time visit is enough. Don't get me wrong, you might really like the place...it just wasn't for me...
