Le Cuvier

Le Cuvier is owned by the exotic and saucy winemaker John Munch, who is a well known Paso Robles wine pioneer making wine in the region for over 30 years.  His irreverent and engaging personality is reflected in his winemaking style.

At Le Cuvier they have firmly dedicated themselves to making life as interesting as possible, while leaving the entire process of winemaking in the hands (so to speak) of the wild beasties. Indeed, all human efforts in the effervescent process is evanescent.”

In sum, the deep-hued, opaque, & intense character one experiences from Le Cuvier wines is borne from the practice of wild yeast fermentation, coupled with uncommonly long barrel-aging that allows the wine to develop its complex array of flavors and aromas.

Visitors to wine country love a view, & this location offers a vast one. The tasting room sits atop a scenic mountain ridge above Adelaida Road, only 4 miles from downtown Paso Robles. Le Cuvier derives its name from the French, meaning “little barrel room.” The barrel room is located on the new facility’s bottom tier, it is the first structure guests see as they climb the road up to the home property & tasting room.

What visitors will notice on arrival are the bright Provencal-inspired colors! Walk up to one of the serving tables & enjoy Le Cuvier’s fine wines & hors d’oeuvres. Then soak in the views from the large picture windows & doors. A large oak tree looms over a small, beautifully landscaped picnic area.
