AmByth Estate is a Demeter certified Biodynamic farm, meaning the farm functions as a whole. It is beautiful to see the vineyards integrated in a productive farming style. The owners have orchestrated a chain of natural farming methods to grow their grapes: animals such as cows and chickens fertilize the soil, perennial plants and trees help pollinate with the assistance of the vineyards’ own bees, and water is consciously conserved to provide the ideal type of wine. Inputs such as chemical fertilizers, pesticides, herbicides and fungicides are prohibited.
AmByth Estate is Paso Robles’ first and only Demeter certified Biodynamic vineyard and winery. The vineyards consist of over 20 acres planted to Rhone varietals, and an additional acre each of Sangiovese and Tempranillo. Interspersed throughout the vineyards are over 650 olive trees, all of Spanish varietals. The owners also produce Extra Virgin Olive Oil, which is for sale at the winery.
The vineyards are beautiful and it is educational to see a working farm in action. They are 100% dry-farmed, and cows and chickens are meandering through the grapevines, aiding the soil. The bees are hard at work in the gardens, which produce 85% of the farm’s fruit and vegetable consumption. They have also installed solar power panels and are enjoying the benefits of saving energy in a very "green thumb" way. AmByth does mean "forever" in Welsh, and this winery would love to show you what forever looks like.
