The tasting room and restaurant at Baily Winery are chateaux-like, with stone brick walls, tall ceilings and sculpted “Griffins” overlooking the grounds. Winemaker Phil Baily and Chef Carol Baily have created a lovely place for wine and food lovers.
The focus here is on Bordeaux grape varieties. Baily also produces a range of dessert wines and rosés, as well as Riesling, Sangiovese, Chardonnay and some lovely blends. The tasting room and gift area is expansive and includes a deli for fresh gourmet food. For a real treat, on Sundays they serve sushi!
The fruit comes from 32 acres of grapes from four different locations in the Temecula Valley. The soils are generally decomposed granite and are well drained. Vines are cooled during the summer days by breezes that flow through a gap in the Coastal Range. With an average elevation of 1,500 feet, the vineyards experience cooler summer nights. They are all drip-irrigated to make up for normal deficiencies in rainfall.
In 2001, a new state-of-the-art production facility was completed, allowing for full control of the winemaking–from grape growing to bottling, ensuring consistency and quality.
Wine and dine at Baily Winery at Carol’s Restaurant, which has a selection of luncheon salads, sandwiches, pasta dishes, and grilled fish and steak, with live music on Sundays.
You can also experience two unique tasting flights at the Estate Tasting Room at 36150 Pauba Road. This is open from 11:00 to 4:00 pm on Thursdays through Sunday. You need reservations for this tasting room, so call 951-972-9768 for more details.
