Guillaume and Soléne Fabre moved from France to America so they could follow their dream of making their own wines that capitalize on the unique terroir of California. They acquired 6 vineyards in the beautiful wine country, where the rocky soil and the enticing climate produce world-famous grapes.
Guillaume Fabre is so proud of these vineyards that he gives tours of them. You have to call 2 months in advance, but you will admit it is completely worth the preparation when he teaches you the techniques of viticulture and gives you a VIP tasting of his limited edition wines and specialized menus. You will enjoy the endless rolling hills of greenery that wine country produces while expanding your knowledge base in a most interesting area.
If you don’t really need a tour, but would like to sit back with some old world charm and a bottle of layered wines, Clos Solene Winery has a tasting room in Paso Robles’ Tin City. There is a wooden sign with their name on it hanging from a metal post outside to distinguish it from the other industrial Tin City buildings. Once inside, you will find a modern tasting room where you can stand at their polished pine bar and relax. The hosts bring in a friendliness unmatched and 97 point wines, which you can focus all your attention on in the uncluttered, white-walled tasting room. You do have to make an appointment, but the experience will blow you away once you are there.
You can enjoy both Rhone style red blends and Bordeaux red blends at Clos Solene. The winery was established in 2007.
