This ultra premium winery makes wine in small lots, selected from organically grown vineyards, and hand harvested. It’s currently the only bonded downtown winery in Paso Robles and is a treat to discover.
Located on the East side of town this boutique winery makes outstanding Chardonnay, Alicante Bouchet, Cabernet Sauvignon, Petite Sirah, Syrah, Tempranillo and Zinfandel. As a family operation there is a good chance the winemaker or his business partner wife will be on the premises to share with you the joys of their product. The tasting includes complimentary cheese and sausage.
The wine is not fined or filtered so it keeps its full potential in the bottle. The winery uses several techniques to enhance the wines natural characters and flavors, including cold soaking the fruit before fermentation. The third generation winemaker is a former Los Angeles chef, also uses an extended maceration process that naturally softens the tannins. With the exclusion of some white wines, all of the wine produced is fermented in either open top bins or barrels.
Barrel samples are a frequent part of the tasting experience here as the winemaker likes to share and educate the visitor on how a wine might be developing.
