Jarvis is a unique totally underground winery that includes the Jarvis Barrel Chai, which is the largest underground man-made chamber in the world. It is connected to the Crystal Chamber, which is the home for large amethyst geodes and quartz crystals. The Tasting Room is located inside the cave where guests are seated at a large granite table while they can taste six different Jarvis wines. The deep underground chambers are naturally cool which is perfect for aging wine.
The Jarvis Cave is fronted by a several acre grassy meadow, which was originally designed to be an ecological parking area. Two natural lakes on the estate provide the winery and vineyard ample amounts of water, and all of the winery’s energy needs are met by extensive solar panels that power every aspect of the winery, making them self-sufficient. The Jarvis winemaking facility is located in caves tunneled in the Vacas Mountains, four miles east of the town of Napa. It is truly a magnificent feat of engineering.
It has long been understood that many of the finest wines come from caves. Jarvis was the first in this country, however, to tunnel a cave so large that it could hold all the winemaking operation. As the cave extends further into the mountain, the chambers become larger, accommodating the whole winery. Capitalizing on the natural underground water, the stream and waterfall running through the center of the winery functions to maintain the humidity level in the cave at an ideal level for the barrel aging. In addition, the beautiful rippling water provides a lovely calming effect for visitors to enjoy.
